Easter bonbon cookies

For Easter bonbon cookies, you will need:

1/2 C butter, softened
1 3/4 C confectioners’ sugar, divided
1 T + 1 t vanilla, divided
1 1/2 of C flour
1/8 t salt
25 jelly beans
1 1/2 T of milk
Pastel food coloring

Bring the oven temperature to 350 degrees.Bring the oven temperature to 350 degrees.
Place the butter, 3/4 C of the confectioners' sugar and 1 T of vanilla into a mixing bowl.
Cream the mixture with an electric mixer on low speed.
Toss the flour and salt together in a bowl.
Using your hands work the flour into the butter mixture until the dough holds together well.
Mold 1 T of the dough around each jelly bean.
Place the cookies on an ungreased cookie sheet.
Bake 12 minutes or until set but not allow the cookies to brown.
Remove the cookies and cool on a wire rack.
Place the remaining 1 C of confectioners' sugar into a mixing bowl.
Add the milk and the remaining vanilla to the sugar.
Blend the ingredients together until smooth.
Divide the icing into four separate bowls.
Color each bowl of icing a different pastel color.
Place a toothpick into the top of a cookie.
Dip the cookie into the icing until completely covered.
Place the iced cookie on wax paper until set being sure to remove the toothpick.
Continue until all the cookies have been iced.

Makes 25 cookies

These Easter bonbon cookies always hit the spot. With a surprise in the middle the kids will love. Make these and place a couple of them in your children's Easter baskets or set them out for an after dinner dessert.
