Savoy cabbage with smokey bacon

For Savoy cabbage with smokey bacon, you will need:

Savoy cabbage with smokey bacon1 large really fresh Savoy cabbage
110g or 4oz smoked bacon, cut into thin strips
1 tsp chopped garlic
4 tbsp olive oil
Salt and pepepr

(serves 6 as a side dish)

Remove the core of the cabbage. Cut the leaves into thin strips.

Heat the oil in a saucepan. Add the garlic and bacon and fry for about 2 minutes over medium heat, stirring all the time. Do not allow the garlic to burn. Add the cabbage and about 1 to 1 ½ cup water, stir well, bring back to boil , cover and simmer over low heat for about 10 minutes. Add salt and pepper to taste and serve.
