Albondigas

For albondigas, you will need:

Ingredients



* half a kilo (1 pound) minced beef
* 1 egg
* 1 small onion
* half a kilo (1 pound) of ripe tomatoes
* 2 stock cubes (Oxo, Maggi or the like, or make your own stock)
* olive oil
* half a cup of red wine
* black pepper



1. Very finely chop up the onion
2. mix the minced meat with the egg and half of the chopped onion and season with the stock cube and black pepper
3. add a generous serving of olive oil into a pot, heat it up
4. make little meat balls of about ping pong ball size and add them to the oil.
5. fry until almost done then add the rest of the onion and fry together with the meatballs for another couple of minutes.
6. peel the tomatoes and finely chop them up, add them to the meatballs.
7. add the red wine the other stock cube and some black pepper to season
8. let everything simmer for another 15 minutes
