For this apple cake recipe, you will need:

2-3 tart apples, cored, peeled and chopped into 1cm cubes
2 tbsp sugar
2 tbsp cinnamon
2 cups flour
2 cups sugar
4 tsp baking powder
1/4 tsp salt
2 1/2 tsp vanilla
1 cup vege oil
4 eggs

Mix together the apple cubes, 2 tbsp sugar and 2 tbsp cinnamon in a large bowl. In a separate bowl, mix together the rest of the ingredients. Add the apple to the cake mixture and combine. Grease a cake ring and transfer the mixture into the cake ring. Bake in a preheated oven at 180°C (350°F) for about 1 hr 10 minutes. Transfer to a wire rack to cool. Dust with icing sugar and serve.
