Baked avocado

Baked avocado

For baked avocado, you will need:

1 ripe avocado -remove skin and stone and slice into 1/2cm pieces
1 tbsp butter
1 heaped tbsp flour
1 cup milk
half cup grated parmesan
one mozzarella ball, cut into 1/2cm slices
salt and pepper

(serves 1)

Baked avocado

Arrange the avocado slices on the bottom of an oven-proof dish.

In a small saucepan, melt the butter, add the flour and fry over gentle heat for about 20 seconds, stirring all the time. Add the milk and keep stirring. Turn up the heat, keep stirring until the sauce thickens. Add most of the parmesan and stir well. Add salt and pepper to taste.

Pour the sauce over the avocado. Arrange the sliced mozzarella on top. Bake in a preheated oven at 180°C/350°F for around 20-30 minutes, until the top starts to turn golden and the dish is bubbling. Removed from oven. Sprinkle the rest of the parmesan over the top and serve.
