Caesar salad

For caesar salad, you will need:

1 large or 2 small cos lettuce, trimmed, washed and roughly chopped into large pieces

2 tbsp olive oil

1/4 tsp cayenne pepper

1 tsp paprika

2 tbsp olive oil

1 oz fine parmesan cheese shavings

2 cups of croutons

The following ingredients are for the dressing:

4 cloves of garlic, peeled and squashed

2 anchovy fillets, minced with a fork

1 egg

5 tbsp light olive oil

1 tbsp balsamic vinegar

1 tbsp Dijon mustard

salt and pepper

(serves 4)

Put the oil in a small pan, add the garlic and anchovies and heat on low for 5 minutes. Remove from heat. Mash the garlic with a fork. Add the vinegar, mustard, salt and pepper to this. Whisk until thickened.

To coddle the egg, cook it in boiling water for 2 minutes only. Cool immediately under running water. Crack the egg into the saucepan containing the ingredients and whisk until throughly mixed.

In a large bowl, toss together the lettuce, parmesan, croutons and dressing. Add a little more freshly ground pepper. Serve.
