Calamari

For calamari, you will need: calamari


2 fresh squids, about 10 inches / 25 cm long each

1 cup self-raising flour

salt

oil for frying

1 lemon, cut into 4 quarters

(serves 4 as an appetizer)

Prepare the squids by discarding the insiders including the bones. Rinse well, blot dry and cut into narrow rings.

Dip the rings in the flour.

Fry the rings in pre-heated oil at 180°C (350°F) for about 4 minutes, taking care as the hot oil may splatter.

Add salt to taste and serve with lemon juice sprinkled on top.
