Carrots and zucchini

For this carrots and zucchini sidedish, you will need:

3 small sticks of carrots, cut into 1-inch strips

1 large courgette, cut into 1-inch strips

1 tbsp butter

1 tbsp olive oil

Salt and pepper

(serves 4)

Boil 500ml water in a medium saucepan. Add carrots and pinch of salt and simmer for 10 minutes or until tender. Drain water. Add butter, olive oil and courgettes and fry for 3 minutes on medium heat. Cover with lid and simmer on low heat for 3 minutes. Add salt and pepper to taste and serve.
