Chocolate chip cookies

For these chocolate chip cookies, you will need:

150g plain flour

100g good dark chocolate

125g soft lightly salted butter

100g caster sugar

75g soft brown sugar

1 egg

2 tsp vanilla extract

1/2 tsp baking powder

Chop or break the chocolate into small chunks.

Place the butter and sugars in a bowl. Blend together with an electric whisk. Add the egg and vanilla exptract and whisk together. Stir the flour and baking powder into this mixture. Then add the chocolate chips and stir lightly.

Drop the mixture onto a lined baking sheet using a wooden spoon, leaving big gaps between dollops as the mixture will spread when they melt.

Bake the cookies in the pre-heated oven at 190°C (375°F) for 8-10 minutes. Allow the cookies to cool on the baking sheet for a few minutes, then peel off the lining paper and cool on a rack. Serve warm or cold.
