Chocolate oatmeal cookies

For chocolate oatmeal cookies, you will need:



125g or 4oz white chocolate
125g or 4oz dark chocolate
125g or 4oz unsalted butter, softened
125g or 4oz caster sugar
1 egg
1tsp vanilla essence
125g or 4oz porridge oats
150g or 5oz plain white flour
2.5ml or 1/2tsp baking powder

Chop the milk and dark chocolate into small chunks, about 1/2cm. Mix the butter and sugar in a large bowl and beat until light and creamy. Add in the vanilla essence, egg, flour and baking powder and mix thoroughly. Stir in the chocolate chips.

Put dessertspoonfuls of this mixture on a lightly greased baking parchment, about 5 cm or 2 in apart. Flatten each dollop slightly with the back of a spoon. Bake in a baking sheet in a preheated oven at 180°C (350°F) for about 12-15 minutes, until slightly golden. Allow to cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool. Serve.
