Fiesta Style Black Bean and Corn Salad

This is a most requested BBQ side. Wonderful ! It gets the guys to eat their veggies. Seed the jalapeno and kids love it too!
15-ounce can black beans, rinsed and drained
2 cups fresh corn kernals
1 /2 cup red onion, coarsely chopped
1 jalapeno pepper, finely chopped
½ red pepper, coarsely chopped
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1/3 cup olive oil
1/4 teaspoon ground cumin
Pinch of cayenne
Salt and pepper, to taste,
Place in gallon size zip lock bag the beans, corn, red onion and peppers. Zip close and gently shake 2-3 times.
In a small bowl combine the cilantro, lime juice, olive oil, cumin and cayenne. Whisk together , season with salt and pepper and pour into the veggie bag. Chill 2-3 hours until ready to serve. Place in a bowl lined with lettuce. Serves 4-6
