Fried chicken

For fried chicken, you will need:

8 chicken thighs

1 egg

1 cup plain flour

1/2 cup corn flour

1 tbsp curry powder

1 tbsp salt

1 tbsp garlic granules

1 tbsp black pepper

1 tsp cayenne pepper

2 tbsp water

enough oil and lard to fill your fryer (in 8 part oil and 2 part lard ratio)

(serves 4)

In a small blender, blend together the egg, water and all the seasoning, until it is a thick but not dry consistency, adding more water if necessary. Transfer the mixture to a large bowl and toss in the chicken. Coat the chicken well. Fry in a pre-heated fryer at 170°C (340°F) for 15 minutes. Turn the heat up to 180°C (350°F) for 5 minutes to crisp up the chicken. Test with a pointed knife for clear juices to check the chicken is cooked.
