Fried rice

For fried rice, you will need:

8 cups of cooked rice, cooled

1 cooked chicken breast, cut into very small cubes

1/2 cup cooked peas

2 eggs

2 spring onions, finely chopped

1 tsp grated ginger

2 tbsp soya sauce

1 tsp sugar

1/2 tsp salt

4 tbsp ground nut oil or your usual cooking oil

water

(serves 2)

Heat the oil and ginger in a large wok. When warm, add the soya sauce sugar and salt. Fry for 1 minute over medium heat. Turn the heat up to high. Add the chicken, rice and raw eggs, stirring all the time and not allowing lumps to form. When heated through, add the peas, and cook for another minute. Stir in the chopped spring onion and serve.
