Gazpacho

For gazpacho, you will need:

1kg sweet and ripe tomatoes

2 sticks of spring onions trimmed and finely chopped

100g red pepper

100g yellow pepper

4 cloves of garlic

50g fresh white bread crumbs

90ml red wine vinegar

90ml olive oil

2 tbsp chopped fresh parsley

2 tbsp chopped fresh basil

1 large or 2 small cucumbers, finely chopped

570ml iced water

1 tsp Tabasco

salt and pepper

croutons and mint leaves to garnish

(serves 4)

Finely chop the tomatoes after peeling and removing the seeds. Remove the seeds from the peppers. Finely chop the peppers.

Using a food processor, blend together the garlic, breadcrumbs, vinegar and oil. Transfer the mixture to a large bowl and add the cucumber, tomatoes, spring onions, peppers, water, herbs and Tasbasco. Stir well and add salt and pepper to taste.

Now return approximately half the soup to the processor to liquidise. Stir back into the remaining soup. Chill and serve with croutons and a few mint leaves to garnish.
