Haloumi cheese kebabs

Haloumi cheese, being of firm texture and does not melt easily, is perfect for the barbecue.

For the marinade for haloumi cheese kebabs, you will need:

2 tbsp sweet balsamic vinegar
1 tbsp chopped fresh garlic
1 tbsp chopped fresh coriander
1 tsp freshly milled black pepper
1/2 tsp salt
60ml / 4 tbsp olive oil

For the kebabs, you will need:

8oz / 225g haloumi cheese, cut into medium cubes
12 small white mushrooms
12 small onions
12 baby plum tomatoes
2 zucchinis, cut into 12 equal chunks
2 red peppers, cut into triangles

To garnish, you will also need a handful of freshly chopped coriander.

(serves 4)

Mix all the "marinade" ingredients together in a large bowl. Throw all the kebab ingredients into the bowl, mix well and leave to marinate in the refrigerator for 2 hours or overnight.

Thread the ingredients onto metal skewers, alternating between ingredients as you go along. Brush any marinade remaining the the bowl over the assembled skewers.

In a preheated barbecue, grill the skewers for up to 10 minutes depending on the heat, so that the outside is just caramelising without being burnt, and the inside is warmed through, rebrushing with the marinade if necessary to add flavor and avoid burning.

Serve immediately.
