honey and mustard bbq chicken

For honey and mustard barbecue chicken, you will need:

4 large chicken legs or 4 chicken breasts (preferably with skin)

150ml runny honey

100ml coarse grain dijon mustard

1 tsp salt

1 tsp garlic granule

2 tbsp olive oil

(serves 4)

Coat the chicken in a mixture of the honey, mustard, garlic granule and salt. You may need to score the thicker pieces with a sharp knief to allow the flavour to permeate. Refrigerate for at least 4 hours (overnight is better). Remove from refrigerator one hour before cooking and coat with olive oil. Then either grill, broil or bake in a pre-heated oven for 40 minutes (until juices run clear) at 190°C (375°F), turning halfway through cooking.

If cooking on a charcoal grill, take care to cook gently as the sweetness of the honey encourages the skin to to burn easily.
