King prawn salad

For king prawn salad, you will need:



Ingredients


* 16 very large fresh king prawns
* 2 little gem lettuce, washed and roughly chopped
* 1 large beef / slicing tomato, cut into small chunks
* 1 cup shop-bought thousand island dressing, or follow the instructions here to make you own: http://cooklikeyourgrandmother.com/2008/05/how-to-make-thousand-island-dressing/)
*freshly milled pepper

(serves 4 as an appetizer)



Remove heads from prawns and cook with the shell on in a large pan of salted boiling water for about 2 minutes, or until the prawns turn red on the outside and are completely opague on the inside. Remove and set aside to cool. Remove shells when cool enough to handle.

In the meantime, mix together the chopped leaves and tomato and arrange on the bottom of serving plates. Arrange the cooled prawns on top and drizzle dressing over the top. Finish with a little freshly milled pepper and serve.
