This lava cake recipe is deliciously rich and velvety in the center.




Lava cakes

Moelleux au Chocolat, originally from France, is a chocolate dessert that melts in the mouth. It is baked in small ramekins for a short time, leaving the center of the dessert velvety to taste. It is usually turned out and served warm with strawberries or other fruit on top, and sometimes with a ball of vanilla ice-cream on the side.

For this recipe, you will need:

4 x 4oz ramekins
4oz bittersweet chocolate
1/4lb unsalted butter
3 eggs
3/4 cup sugar
1/4 cup flour
icing sugar
strawberries for garnish
