Pasta recipes
I have amassed a good selection of vegetarian, fish and meat pasta recipes, due to half my family being meat-lovers and the other half not.
Many years ago, when our boys were little, our Swedish au pair made the most delicious lasagne. She has become vegetarian since but here's her recipes for the best
lasagne
I've ever tasted. It is made with alternating layers of rich meat and white sauces.
The tomato-based
spaghetti neapolitan
is a lovely light dish that can form the basis of a variety of meat or fish pasta sauces. Try
pasta milanese
if you like a buttery version of this with ham and mushrooms added.
The colorful
pasta with salami and peppers
is light without much of a sauce. It is a feast for the eyes and can be made without the salami for vegetarians.
A spicy variation on this would be the
spicy bacon pasta.
One of the easiest and most popular is
pasta with alfredo sauce
and can be made in the time it takes to make a sandwich.
Add a few more ingredients to the alfredo, and you'll have the ever-popular
pasta carbonara
, or the vegetarian
mushroom carbonara
, wonderful with a little truffle oil drizzled on top.
I love pesto. Instead of just having it stirred into pasta, my younger son helped me make up the delicious
chicken pesto
, which is tasty and simple to prepare.
For a meal that you can prepare ahead, for a picnic or party, try the
tuna pasta salad
which is very simple to prepare, and the grapes add a refreshing taste.
Also served cold is the delicious
ramen noodle salad
, made here with seafood, but non-fish lovers can easily substitute the seafood with chicken, shredded pork or white mushrooms.
For pasta sauce with a twist, try
pasta alla vodka.

My personal favorite is
spaghetti vongole with clams
which is great if fresh clams are accessible to you, or good-quality tinned clams will also suffice.
Also along the lines of fish, everyone seems to like the
creamy salmon and prawns pasta
. You can vary this and try it with chicken or mushroom.
My younger son who likes spicy food loves
pasta arrabiata
. You can try adding bits of crispy bacon to it if you prefer meat in your food.
Last but not least, and hopefully not needing any introduction, is
spaghetti bolognaise
. Once you've tried this recipe, you'll wonder why you ever put up with the pre-made sauces that don't taste quite the same.
