For pineapple chicken, you will need:

4 chicken breasts with skins (bones removed), cut into bite-size pieces

1 medium pineapple, prepared and cut into bite-size pieces

1 tsp salt

1 tsp white pepper

1 clove garlic, crushed

1 green / spring onion, chopped

2 slices of ginger

1 small onion, sliced

3 tbsp ground nut oil

2 tbsp sunflower oil

4 tbsp corn flour

1 cup pineapple juice

1 tbsp sugar

1 tbsp white vinegar

(serves 4)

Mix together the chicken pieces, 3 tbsp corn flour, 1 tsp salt, 1 tsp white pepper and the garlic. Add the sunflower oil and mix well. For best results, refrigerate for an hour or two before cooking.

Mix together the pineapple juice, sugar, 1 tbsp corn flour and white vinegar and set aside.

In a large wok, heat the ground nut oil over high heat and fry the ginger and onion for two minutes. Add the chicken pieces and continue to fry on high heat for 5 minutes, stirring frequently. Add the pineapple pieces and fry for another 2 minutes. Add the juice mixture and stir well to form a thick coating. Serve with chopped green /spring onion sprinkled on top, with steamed rice.
