Pork stir fry

For pork stir fry, you will need:

600g pork tenderloin, thinly sliced

1 small onion, sliced

1 red pepper, seeds removed and cut into large chunks

1 green pepper, seeds removed and cut into large chunks

2 tbsp moist black beans, mashed

3 cloves of garlic, thinly sliced

2 chilies, chopped

3 tbsp oil

water

salt and pepper

(serves 4)

In a large lidded wok, heat the oil, onion and garlic over medium-high heat for 2 minutes, add the black beans and chilies and fry for 1 minute. Add pork to brown. Add peppers, stir well. Add 150ml water. Cover and simmer for 3 minutes. Add salt and pepper to taste. Serve with steamed rice.
