Ramen noodle salad
For this ramen noodle salad, you will need:
600g ramen noodles
2 sticks of salad onions - diagonally sliced
20 cooked and peeled medium shrimps/prawns
200g cooked scallops
200g cooked squid rings - optional
juice of 2 limes
100ml sweet chili dipping sauce
50ml water
1 tsp fish sauce
handful of crushed dried seaweeds
2 tbsp sesame seeds
salt and pepper
(serves 4-6)
Cook the ramen noodles in a large pan of salted water. When cooked, drain immediately and soak in ice cold water, drain again and set aside. Mix the seafood, salad onion, water, juice, fish sauce and chilli sauce together in a large serving bowl. Add drained noodles to the bowl and mix very well. Add salt and pepper to taste. Sprinkle seaweeds and sesame seeds on top and serve.
