Spaghetti Neapolitan


For spaghetti neapolitan, you will need:

1 small onion, finely chopped

3 cloves of garlic, crushed

1/4 cup olive oil

10 ripe plum tomatoes, chopped

2 tbsp tomato puree 2 tbsp fresh chopped basil

1/2 tsp salt

1/2 tsp pepper

1 tsp sugar

1 cup grated Parmesan cheese

400g spaghetti

(serves 4)

Heat the oil in a large pan and gently fry the onion and garlic for 3 minutes. Add the tomatoes and puree, sugar, salt and pepper and bring back to boil. Cover and gently simmer for 30 minutes. In the meantime, cook the spaghetti as per manufacturer's instructions. When the sauce is cooked, stir in the basil and serve over the spaghetti with grated parmesan sprinked over the top.
