Spanish omelet

For spanish omelet you will need:


2 eggs, beaten
dash dried parsley
1 cooked potato, shredded
1/4 large onion, shredded
salt and pepper
1/2 cup shredded cheddar cheese
oil

1. In a small non-stick pan, heat 4 tbsp oil, add potato and onion and fry for two minutes.
2. Add dash of pepper.
3. Add pinch of salt to egg and parsley. Add cheese to this mixture and pour over cooked potato.
4. Maintain low heat to cook the omelet. Carefully turn over and cook the other side.
5. Serve hot.




Alternative recipe for spanish omelet:

250g potatoes (peeled weight)

150g frozen peas

1 onion chopped

3tbsp olive oil

8 eggs

100g mature cheddar cheese, grated

salt and pepper

(serves 4)

1. Cut the potatoes into thick slices and cook in boiling, salted water for 5 minutes or until tender. Drain.

Meanwhile, simmer the peas for 2 minutes. Drain.

2. Cook the onion in the oil in a frying pan until soft. Add the potato and cook for 2-3 minutes, turning once.

3. Lightly beat the eggs and season well. Add to the pan with the peas and cheese.

4. Cook over a very low heat for 15-20 minutes or until almost set - there should be a little liquid egg left on top.

5. Put under the grill until the top sets. Serve.
