Spicy bacon pasta

For spicy bacon pasta, you will need:

400g fusilli pasta
1 cayenne pepper or hot chili, finely chopped
2 cloves of garlic, squashed
350g bacon, cut into thin strips
2 tbsp tomato puree
1 tsp onion granules
3 or 4 fresh basil leaves, cut into very fine strips
2 bell peppers, yellow or orange ones if available
1 cup broccoli florets
2 tbsp olive oil
salt and pepper
1/2 cup parmesan

(serves 4)


Cook the pasta in a large pan of salted water. Drain when slightly undercooked and set aside.

Cook the broccoli for two minutes (only) in water. Drain and set aside.

Cut the bell pepper into small pieces. Fry in the olive oil for about 10 minutes over medium heat. Add the broccoli and fry for another two minutes. Remove from pan and set aside. Fry the bacon strips in the same pan until crispy. Add tomato puree, cayenne pepper/chili, garlic and onion granules, stir well and gently fry for 2 minutes. Add pasta, peppers and broccoli and stir well. Heat through gently. Add salt and pepper to taste. Serve with basil and parmesan on top.
