Spinach pizza



For this spinach pizza with pine nuts, you will need:

one pizza dough base - click here for the dough recipe

1 1/2 cup chopped spinach

1/3 cup pine nuts

2 tbsp sun-dried tomato paste

125g feta cheese

150g mascarpone cheese

olive oil

1 onion, finely sliced

2 garlic cloves, crushed

salt and pepper

(serves 2)

Make the pizza dough and allow to rise for about one hour or until doubled in size.

Preheat two baking sheets at 220°C (425°F).

Fry the onion and garlic in 2 tbsp olive oil in a small frying pan for about 10 minutes over low heat until soft. Turn off heat. Add the chopped spinach to the pan, add salt and pepper and mix well.

Divide the dough in half. Roll out separately onto a lightly floured surface. Transfer onto the baking sheets. Divide the tomato paste between the two doughs and spread thinly. Arrange to spinach mixture on top.

Mix the cheese together in a bowl using a small wooden spoon. Drop teaspoonfuls of this all over the pizzas. Sprinkle the pine nuts over the top. Cook in the preheated oven for 15 minutes when the cheese should be bubbling.
