Sticky barbecue ribs

Read article: A chef's guide to buying a barbecue

sticky bbq ribs For sticky barbecue ribs, you will need:

20 meaty pork ribs

4 tbsp brown sugar

90ml liquid honey

2 tbsp bbq sauce

4 tbsp tomato ketchup

juice of 1/2 orange

2 tsp orange zest

2 tsp garlic granules

2 tbsp dark soy sauce

2 tbsp balsamic vinegar (Click here to find out more about balsamic vinegar)

1 tbsp freshly grated ginger

1 tbsp mustard

1 tsp sea salt

1/2 tsp pepper

(serves 4)

Dip the raw ribs in a large pan of boiling water for 30 seconds. Remove, drain and dry very well with paper towel. Mix all seasonings together and rub all over the dried ribs. Refrigerate for at least 4 hours (overnight would be better). Then either cook on a barbeque or in a preheated oven at 200°C (400°F) for 1 hour, turning from time to time to prevent burning.

Or you may choose to serve the ribs as a rack, like this:
