Toad in the hole

toad-in-the-hole

For this "toad in the hole", you will need:

8 cooked pork sausages

200g plain flour

1/2 small onion, finely chopped

1 tbsp wholegrain mustard

1/2 tsp salt

1 tsp sugar

3 eggs

300ml milk

3 tbsp oil

30g softened butter

extra butter for greasing dishes

(serves 4)

Blend the softened butter, milk, flour, eggs, sugar and salt in a blender until smooth. Transfer into a jug and refrigerate for a couple of hours. Fry the onion in the oil for 3 minutes over medium heat. Grease 4 individual oven dishes with butter. Divide the onion and oil mixture into the four dishes, spreading thinly on the bottom. Place two cooked sausages in each dish, a little apart from each other. Pour batter into dishes around the sausages. Bake in a preheated oven at 200°C (400°F) for about 40 minutes until golden brown. Allow to cool for 5 minutes. Lift each portion carefully onto a serving plate, and spread the mustard over the sausages. Serve with vegetable and gravy if desired.
