Winter Salad

For winter salad, you will need:

winter-salad1 medium parsnip, cut into 1cm cubes
1 cup walnut halves
1 cup feta cheese cubes
handful of rocket leaves
handful of lambs lettuce
1 heaped tbsp chopped fresh chive
2 tbsp balsamic vinegar (Click here to find out more about balsamic vinegar)
1 tbsp sweet sherry
2 tbsp olive oil
salt and pepper

(serves 4 as a starter)

In a cup, mix together the balsamic vinegar, sweet sherry and olive oil.

Cook the parsnip cubes in a small pan of boiling water for about 10 minutes until tender. Turn off the heat. Drain and pour the vinegar mixture into the pan to warm slightly. Toss this into a mixture of the walnut, feta cheese, rocket and lambs lettuce. Sprinkle chopped chive on top. Add salt and pepper to taste and serve immediately.
